The bottle contains only liquid components: there is no propellant at all. When you pump the trigger mechanism, you reduce the air pressure in the tube that flows down into the bottle. Because there is air in the bottle, the liquid is squeezed onto the tube at the top. The pump mechanism forces some of the liquid through the tube into a much smaller nozzle, so it becomes a high-speed aerosol of small droplets.
The biggest advantage of sprayers is that they do not need propellants, so they are safer to use. But they generally do not make fine or even spray like aerosol cans, so they are not very suitable for products such as paints and polishing agents. They also have to pump hard to make them work, so it is difficult to release a small amount of product with them.

The air in the middle of the top of the canteen is heavier than the air in the pipe, so it pushes the liquid towards the bottom. The water is affected by the pump mechanism.
